Agreed. If I were you I would combine quad and hams together. You should open up with deadlifts and then switch to olympic squats. This should covery your lower leg development just fine by itself. And this will allow you to deadlift and squat every week.You do full deads and stiff-legged too on 2 separate days within the same week? Its an overkill imo. Maybe thats what holding you back.

Mon-Chest,Tri's and calves
Tue-Quads and Hams
Wed-Rest
Thur-back, bi's and abs
Fri-Shoulders,Traps
Sat-Rest
Sun-Rest
