What is the difference between looking smooth or flat/depleted?

Thats a good question bro, You hear terms like hardness, smooth, flat, wet, dry, etc...

My perspective is that smooth may mean one of three things:
1. Holding water
2. Holding fat
3. Holding both

I could be wrong but thats my understanding.
